Curry and Coconut Sauce

40 g butter
2 green onions, sliced
1 tablespoon finely chopped lemon grass
1 tablespoon mild curry powder
400 ml can coconut cream
1 tablespoon chopped fresh coriander leaves

Melt butter in small pan, add onions and lemon grass; cook, stirring, until lemon grass is soft Add curry powder cook stirring until fragrant, then stir in coconut cream; simmer, stirring, until mixture thickens.
Stir in coriander.
