2 Tablespoon Olive oil
1 crushed garlic clove
425 g can,drained and rinsed cannellini beans
1 sliced red onion
125 g sun dried tomato in olive oil chopped
1 tablespoon chopped black olives
2 taspoons chopped capers
2 taspoons chopped thyme
1 tablespoon parshley
1 tablespoon extra virgin olive oil
2 table spoon lemon juice
sald and pepper
Heat the oil in a frying pan and fry the garlic over a high heat, stirring, until golden.
Place the beans in a large bowl and stir in the garlic, Add the rest of the ingredients and season with salt and pepper.Mix well then serve with crusty bread.
