Dhal-Pilau

      1. 3/4 measure rice
      2. 1/2 measure dhal
      3. 5 ozs ghee
      4. 1 coconut
      5. 4 ozs bombay onions
      6. 2 ozs red onions
      7. 4 inch piece rampe
      8. 2 inch piece cinnamon
      9. 20 cardamons
      10. 4 tbs rose water
      11. salt to taste

      Method

      Wash the rice and dahl separately, scrape
      the coconut and squeeze it to obtain six
      tea cups milk. Chop the bombay onions and
      powder the cardamons. Temper the ghee with
      the chopped red onions, a piece of rampe
      and a few cardamons. When the onions turns
      light brown, add the rice,milk, bombay onions,
      rampe,cinnamon, cardamons and salt to taste.
      stir well and cover the pan.When the rice is
      boiling,add the dhal and mix well, cover the
      pan and after about 10 minutes sprinkle the
      rose water and stir. Let it simmer on a low
      fire for a while. Serve hot.
