CHINESE NOODLE SOUP

      Recipe: * Takes about 50 minutes to prepare, less if you have
      prepared the shrimps ahead.

      INGREDIENTS:

      200 gm\2cups thick rice noodles
      1\2 kohlrabi
      2 carrots
      100 gms Chinese cabbage
      1 onion (2shallots)
      8 shrimps, peeled and de-veined
      3\4 litre 21\2 cups chicken stock
      Soya sauce
      Salt, pepper


      METHOD:

      Soak the rice noodles in coldwater (rice noodles are
      made from rice flour, which is particularly suited to
      Oriental cuisine).

      Prepare the vegetables: Peel the carrots and the kholrabi
      and cut into thin slices. Finely slice the Chinese cabbage.

      Peel the chop onion. Fry the onion in butter, pour in the
      soup, add the vegetables, then cook at full power, in a
      covered dish(takes 9 minutes in the microwave). Add the shrimps to the soup the cook on High for 3 minutes.

      Take the noodles out of the water and cut into strips
      10cm long, add to the soup and let it simmer (takes
      about two minutes High in an uncovered dish in the
      microwave.

      Season with salt, pepper and soya sauce.

      SERVES 4.
