RICE CASSEROLE

      INGREDIENTS:

      250ml\1cup long grain rice
      1 leek
      Approx. 300gm\14oz beef\veal sausage
      A little black pepper
      200ml\3\4cup grated cheese
      30ml-45ml\2-3tbsp mustard

      METHOD:

      Cook the rice according to the instructions on the packet.
      Meanwhile, shred the leek and cut the sausage into strips.
      Brown the sausage quickly in a pan, stir in the leek
      and cook for a few minutes.

      Beat the egg and cheese together and season with salt,
      pepper and mustard. Stir in the sausage and leek and egg
      mixture into the rice and mix well.

      Serve at once with bread and a salad.

      ** Use onion instead of leek if preferred.
